Chocolate Chip Oat Squares

One of my favorite things to do on a Sunday afternoon is to enjoy a cup of tea with something I baked that weekend. It truly is one of the most relaxing times for me. And these oat squares pair so nicely with my favorite tea, Earl Grey with honey.

Ingredients
1/2 cup unsalted butter -soft
1/4 cup brown sugar
1/4 cup white sugar
2 large eggs-room temperature
2 tsp vanilla
1 cup flour
1 1/4 cups quick oats
1/2 tsp baking powder
1/4 cup mini chocolate chips
Bakers note
If you don't have chocolate chips in your pantry, but you have some nuts or even white chocolate chips, you can always use those instead. I've also used butterscotch chips and mini M&Ms when making these squares, since I had them in my pantry, and they were a delicious alternative.

Directions
- Line a 8x8 inch baking tin with parchment paper, leaving a few inches of parchment paper to hang over all four edges.
- Pre-heat the oven to 350 degrees F.
- Cream the butter using an electric mixer on medium-low speed.
- Add in the sugars and cream together on medium-low speed.
- Add in the eggs and the vanilla. Mix on low speed.
- In a separate bowl, mix together the flour, oats, baking powder, and chocolate chips.
- Gradually mix the dry ingredients into the wet ingredients using a spoon.
- Place the dough in the baking tin and flatten it out evenly. A spoon works well.
- Top with some mini chocolate chips and gently press them into the dough.
- Bake for 32-34 minutes.
- Carefully lift out the square from the tin and place it on a wire rack. Carefully remove the parchment paper.
