Biscuits

Biscuits are one of the simplest things to bake and they're so scrumptious, especially when they're still warm from the oven. What I love about biscuits is how versatile they are. Whether you’re enjoying them for breakfast with some sweet jam and honey or smothering them with butter to enjoy them with your dinner, biscuits are the perfect addition to any meal.



Ingredients make 10 biscuits

1 cup whipping cream -room temperature

2 large eggs -room temperature

2 tsp vanilla

1 cup unsalted butter -cold and cubed

3 cups flour

6 tsp baking powder

1/3 cup sugar

1/4 tsp salt



Bakers note

Sometimes I'll bake a batch of scones and freeze them for future use, and the best way to heat up frozen scones is in the oven. Pre-heat the oven to 350 degrees F and line a cookie sheet with parchment paper. Put the frozen scones in the oven until they're soft. Usually about 6-8 minutes.



Directions

- Line a large cookie sheet with parchment paper.

- Pre-heat the oven to 350 degrees F.

- Whisk together the whipping cream, eggs, and vanilla. Set aside.

- Put the butter in a large bowl.

- Put the flour, baking powder, sugar, and salt into a sifter. Sift the dry ingredients on top of the butter.

- Cut the butter into the dry ingredients.

- Pour the wet ingredients into the dry ingredients and mix together using a spoon.

- Knead to incorporate the ingredients. Don't overwork the dough. The ingredients don’t have to be fully combined.

- Form a ball.

- Flour a hard surface and place the dough on top. Flatten the dough a bit and dust the top of the dough with flour too.

- Flatten the dough till it’s 1 inch thick.

- Using a round cookie cutter or glass, cut out the dough.

- Place on the parchment paper.

- Form a dough ball with the remaining dough and flatten. Cut out some more dough circles. Place on the parchment paper.

- Bake for 20-22 minutes.

- Place the biscuits on a wire rack to cool.
